Apple Cinnamon Breakfast Muffins

This breakfast recipe combines the wonderful flavors of apples, cinnamon, and peanut butter to create a on the go snack that is tasty and satisfying.

Ingredients:
1/2 cup coconut flour
1/2 cup almond flour
1 cup buckwheat flour
1 cup unsweetened coconut shreds
2 T GSG Sprouted Flax
1 ts sp baking soda
1 ts sp baking powder (aluminum free)
1 cup almond butter
2 cups unsweetened applesauce
1 cup dates, pitted
1 ts sp cinnamon
1 T vanilla extract
¼ cup coconut milk (carageenen free)
1T raw organic honey

Directions:
1.) Preheat the oven to 350 degrees F (175 degrees C). Grease two 12 cup muffin pans or line with paper cups.

2.) In a medium bowl, stir together all the ingredients until smooth.

3.) Spoon the batter into the prepared cups, filling almost to the top.

4.) Bake in the preheated oven until the tops of the muffins spring back when lightly pressed, about 25 minutes

5.) Cool in the pans for at least 10 minutes before removing.
