Vegan Potato Salad

Ingredients

6 pounds Potatoes (any kind), unpeeled

2/3 c Veganaise (vegan mayonnaise–there is also a soy-free version)

¼ c spicey mustard

¼ c apple cider vinegar

½ tsp cumin

½ tsp chilli powder

1 tsp freshly ground pepper

1 tsp pink himalayan sea salt

2 T raw organic honey

½ c diced pimentos, (or 4 oz jar diced pimentos drained)

½ c scallions, sliced

 

Directions

Put the potatoes in a large pot and fill with cold water.

Bring the water to a boil.

Reduce the heart to a medium high and simmer the potatoes.

Once soft, drain and cut into large chunks.

 

Mix all other ingredients to make a dressing.

Toss the potatoes with the dressing.

Chill. Serve immediately.
