Raw Vegan Avocado Pudding

 

 

Raw Vegan Avocado Pudding

2 tablespoons coconut oil
2 avocados
3 tsp gluten-free vanilla extract
1 teaspoon fresh ginger, finely grated
3 tablespoons coconut water
3 tablespoons cacao
3 tablespoons raw organic (runny) honey

Preparation

1. Put the coconut oil in a small pan and heat gently for 5 minutes until melted. Remove from the heat.

2. While the coconut oil is melting, slice the avocados in half and remove the pits. Scrape all the flesh into a blender or food processor. Add vanilla extract, ginger, and coconut water. Blend until smooth.

3. Add the coconut oil, cacao, and raw organic honey. Blend until completely smooth.

4. Spoon the mixture into four small dessert glasses refrigerate for 2 hours before serving.

I like to freeze these in popcycle molds and serve to my kids as fudgepops. Delicious!
