Mango Garden Slaw
2 c Cabbage (green and purple), shredded
1 c Mango, chopped
1 c Carrots, shredded
1 c Jicama, chopped
2T Mint, chopped
¼ c Pumpkin Seeds
1T ground flax
To make the Slaw:
Mix all together in large bowl:
Shredded Green and Purple cabbage, chopped mango, shredded carrots, chopped jicama, Chopped mint, flax, and pumpkin seeds.
To make the Tahini-Garlic Dressing:
1/2 c Tahini
7 T filtered water
2 cloves garlic, minced
1/2 tsp cayenne
1/2 tsp himalayan sea salt
1 T extra virgin olive oil
1 T grade B maple syrup
Mix all ingredients together and add to slaw.
Serve and enjoy.
