Baked Blueberry Oats
Talk about a yummy breakfast option!
This delectable whole grain cereal replacement is choc-full of flavor, omegas, nutrition, and blueberries loaded with antioxidants to kick start your morning off right.
Ingredients:
1/2 cup cooked gluten-free rolled oats
1 cup cooked quinoa
1/2 c gluten-free flour
1/2 c coarsely chopped walnuts
1/2 c coconut oil
2T vegan protein
2T ground flax
1 tsp almond extract
1/4 c organic raw honey
1/4 c unsweetened coconut milk
1/4 tsp ground cinnamon
3 c blueberries
1/8 c coconut sugar
Directions
1.) Preheat oven to 375 degrees
2.) Combine all ingredients, except the berries in a large mixing bowl
3.) Pour the berries into a 9 x 9 baking dish, then spread the quinoa/oat mixture over the top evenly
4.) Sprinkle coconut sugar over the top
4.) Bake for 35 – 40 minutes or until lightly browned/crispy on the top
