Chocolate Superfood No Bake Cookies
1/2 cup raw organic honey
1/4 cacao
1/4 cup coconut oil
1/4 teaspoon fine sea salt
Combine first 4 ingredients in saucepan over medium heat.
Bring to a boil for one minute, stirring often.
Remove from heat and add:
1/2 cup nut butter (almond butter or sunbutter)
1/2 teaspoon vanilla, gluten-free
Stir until smooth. Add the following and stir until well coated:
1/2 cup sunflower seeds (Can substitute with oats)
1 cup slivered almonds
1/2 cup unsweetened coconut flakes
1 T ground flax
Drop the mixture by spoonful onto baking sheet lined with parchment paper. Place in freezer to set.
Serve immediately and Enjoy!
