Vanilla Protein Pancakes

Yummy Vanilla Protein Pancakes:
It’s this simple to add more protein to your day!

Ingredients:
2 scoops vegan protein
1/4 cup unsweetened coconut milk
1 tsp cinnamon

1 cup gluten-free, steel cut oats
1 tsp aluminum-free baking powder
2 egg whites or use ground flax and make flax eggs (2T ground flax and 5 T filtered water; mix and let sit to thicken)

Directions:
Mix together all ingredients until you achieve a pancake-like consistency.

Add filtered water by the tablespoon if you need to thin the batter.
Preheat a pan over medium heat, then grease with coconut oil.
Place mix into pan and cook both sides until mix is fully cooked through. Test with a toothpick.

Serve with butter (grass fed), grade B maple syrup, or homemade jam.
