Yummy Spring Salad

This is a simple, yummy spring salad. So simple, so easy, so good. Make sure to get some dandelion greens in this salad–great for liver detoxification.

Spring Salad

2 huge handfuls of mixed greens
1 huge handful of spinach
1 cup of shredded chicken* optional
1/2 cup black beans
1/2 cup madarin oranges

1/2 cup purple cabbage
1/4 c diced green onions
1/4 cilantro (use less if desired)

**use only hormone-free, antibiotic-free, free range, organic chicken.

Sweet Maple Dressing

This dressing delicious on any salad, any grain based meal, and as a dressing for baked chicken. For example, I love it on my quinoa salads).

1  1/4 cup olive oil
3/4 cup red wine vinegar
1/2 c grade B maple syrup
1/4 tsp sea salt
1/4 cup  + 1T brown mustard
1/2 yellow onion
2 minced garlic cloves

Blend in high powered blender until smooth.

Will last in fridge for 5-7 days if using fresh ingredients.

Will last in fridge for 2 weeks if using powdered onion and garlic exchanges.
Will freeze well for 2 months.
