Cucumber Salad
Cucumbers are growing out of my garden like CRAZY! I have had to get a little creative in order to use them up. Of course I add them to my smoothies and salads, but making a salad using cucumbers is a great way to use 2 of them at once! Cucumbers are so good for you, too. Cucumbers contain an anti-inflammatory flavonol called fisetin, and polyphenols called lignans, that play important roles in reducing inflammation and preventing cancer. So eat up!
Ingredients:
3 Avocados
1/3 cup Cilantro
2 Cucumber
Juice of 1 Lemon
3/4 Red Onion (if you LOVE onion like I do, add the whole thing)
8 Roma Tomato
1/8 tsp fresh ground pepper
1/2 tsp pink himalayan sea salt
3 T olive oil
1. Prep and Cut up veg and avocado
2. Chop cilantro
3. Add olive oil, salt, pepper and fresh squeezed lemon.
4. Serve
5. Enjoy!
