Pumpkin Superfood Cookies

This protein and flax packed snack is a family favorite. Enjoy this pumpkin superfood cookie with coconut milk, almond milk or hot chocolate on a cold winter afternoon.
My kids love this pumpkin superfood cookie when they get home from school, and I love that I am giving them healthy plant proteins and a boost of omegas for their brain and cardivascular health from the flax.
Ingredients:
2 c pumpkin puree
1/4 c vegan plant protein
1 T ground flax
1 c applesauce
1 tsp pumpkin pie spice
1 1/2 T cinnamon
4 c rolled oats
1 c vegan chocolate chips
Optional: chopped walnuts
Directions:
Preheat oven to 300 degrees
Mix all ingredients, folding in the chocolate chips last.
Using a small ice cream or melon scoop, scoop the dough into a baking sheet greased with coconut oil.
Bake for 15-18 minutes.
Cookies should be soft, but not too doughy.
