Kale has so many incredible health benefits.
Not only is it great at helping to balance hormones, its also a superfood due to its awesome vitamin, mineral, and antiinflammatory properties, it also contains glucosinolates–the stuff that makes greens bitter–which helps to prevent breast, ovarian and prostate cancers.
Pretty awesome ruffled leaf, right?
And if you’ve read something on the internet that says kale is bad for your thyroid, consider this:
first, you would have to eat a truck load (literally) of kale daily for this to be a factor, and
if you are currently eating processed foods, preserved foods, take-out, tons of sugar, soda, and processed oils, then you have more things to worry about than what kale will do to your thyroid–because everything you are eating is already toxic to your health.
And kale would be a good replacement for any of those things: Truth.
Kale is so easy to grow, so versatile to eat–add it to your soups, smoothies and salads, and rock the heck out of your nutrition, hormone balance, and healthy aging.
Tropical Kale Smoothie
1 c frozen mango
1/2 c frozen pineapple
1 c kale leaves, stems removed
1 c coconut water
1 scoop vegan protein
3 T chopped pistachio
Optional: 1 c ice
Blend well and serve cold.
Enjoy!
ProTip: Reduce the coconut water and add more ice, if you want more of an ice cream consistency, and add more coconut water/less ice if you want more of a thin, liquid consistency.
