Baked Oatmeal with Blueberries
Serves 6
Ingredients
2 organic eggs
4 c light coconut milk
4 T raw organic honey
1/4 tsp kosher salt
1/4 tsp cinnamon
6 c gluten-free rolled oats
1/4 coconut sugar
2 c blueberries
1/4 c sliced almonds
Honey to taste
Optional: Top with a dollop of coconut whipped coconut creme
Directions:
Preheat oven to 375. Grease 8 inch baking dish with coconut oil.
Beat eggs until frothy, then whisk in coconut milk, honey, salt, and cinnamon.
Toss oats with sugars in large bowl. Pour coconut milk mixture over oats and coat. Carefully fold in the all but 1/4 c blueberries and 4 T almonds. Then spread mixutre into greased baking dish. Sprinkle remaining blueberries and almonds on the top
Bake 25 to 30 minutes, or until lightly golden on top and cooked throughout.
Serve warm, drizzled with honey and a dollop of whipped coconut creme.
ProTip: Try baking with different fruits. I like to mix this up and use apples or peach in place of blueberries depending on the season.
