Healthy Carrot Cake & Sprouted Flax Oatmeal

Creamy, crunchy, chewy and sweet — this recipe packs a nutritional punch to keep you fuelled throughout the morning. Prepared in a matter of minutes, this Carrot Cake Oatmeal is loaded with heart-healthy walnuts, whole grains, sweet carrot & cinnamon for the perfect start to the day.
Serves 2
Ingredients
1 cup gluten-free steel cut oats
2 1/4 cup filtered water
1 tablespoon raw organic honey
1 teaspoon pure vanilla (high fructose syrup free)
2 tablespoon dried fruit (raisins, craisins, apricot)
1/2 banana
1 cup grated carrot
2 teaspoon cinnamon
2 tablespoon chopped walnuts, pine nuts, pumpkins seeds or granola
pinch pink Himalayan sea salt
2 T grond
Preparation
1. In a small pan over a medium heat, bring the water to a boil and add the oats. Reduce to a simmer and stir for 3-4 minutes until liquid is almost absorbed.
2. Add sweetener honey, vanilla, cinnamon and salt, and whist again until combined. Stir through carrot and dried fruit.
3. Sprinkle with ground flax, then top with chopped nuts and bananas, enjoy!
