Cranberry Protein Bars (Sweetened Only With Raw Honey)

I absolutely LOVE it when I can find clean, whole food recipes that nourish and strenghten my bod. It is so rare to find yummy power-treats like this that my kids eat and eat and eat with a smile on their face!

Of course, I am a sneaky mom, so I improve the nutrition in this recipe to make it a “superfood” by adding GSGLife sprouted brown flax (sprouted flax increases the omegas by 400-700%–reaching over 20,000 omegas in this complete recipe–so awesome!)

Makes 10 bars

Ingredients
3/4 cup unsweetened shredded coconut
1/2 cup raw, organic pecans (chopped)
1/3 cup raw, organic sesame seeds, unsalted
1/4 cup raw, organic pumpkin seeds, unsalted
1/4 cup raw, organic sunflower seeds
1/4 cup GSGLife Sprouted brown flax seed
1/4 cup dried unsweetened cranberries or other dried fruit (dates and raisins are relish!)
1/4 teaspoon sea salt
1/4 cup raw organic honey
1/4 cup organic sunflower seed butter

Preparation

1. Preheat oven to 350ºF.

2. Line a square 8×8 pan with parchment paper and lightly grease with some olive or coconut oil.

3. Add coconut, pecans, sesame seeds, pumpkin seeds and sunflower seeds into a large frying pan. Stir occassionally over medium-low heat for 5 minutes or until lightly toasted.

4. Remove from heat and place in a large mixing bowl with the sprouted flax seed, cranberries and sea salt.

5. Add honey and sunflower seed butter into the mixing bowl and mix well until all ingredients are evenly distributed. Transfer mix into the pan and press down evenly and really pack it in there. (If you don’t pack it down firmly enough, the bars will crumble.)

6. Bake in oven for 15 minutes.

7. Remove from oven and let cool completely.

8. Once cool, lift parchment paper out of the tin and slice into bars with a sharp knife.

9. Serve and Enjoy!
Alternately, bars can be frozen for up to one month.
