Easy Gluten Free Pancake Mix (and gluten free baking flour)
Ingredients
1 c almond flour
3/4 c coconut flour
1 cup oat flour, gluten-free*
1 cup buckwheat flour (ground from raw buckwheat groats)*
1/4 cup organic yellow cornmeal, gluten free
3/4 tsp xanthan gum
1 tsp pink himalayan sea salt
1 Tbsp baking powder, aluminum-free
1/2 Tbsp baking soda
1/4 c coconut sugar
*I buy organic buckwheat grouts in bulk and grind them up in my high-powered blender to make the buckwheat flour. I do the same with gluten free oats. It saves me $$$
**When I bake, I will substitute 1/3 c of the almond flour for1/3 c GSGLife vegan gluten free protein powder (vanilla, chocolate, berry or natural) and I will add 2 T GSGLife sprouted brown flax to the mix.
You will need to increase the moisture of your mix when you make these substitutions. I just add filtered water 1T at a time until I have the desired consistency for whatever it is I am baking, in addition to the liquid required in the recipe.
I double this gluten free flour and store it in an air-tight container so that I have it on hand for baking, waffles and pancakes.
