Zoodles with Peanut Sauce

I don’t love spaghetti as much as I love the sauce–I’m sure you hear me on this one.

And I avoid wheat (including pasta), so I miss the sauces soooo much.

To fill my need for great sauce, I substitute pasta noodles for “zoodles”–zuchini noodles, giving this dish a healthy twist. Using a vegetable spiralizer, I can make almost any vegetable a “zoodle.”

 

 

Ingredients:

4 cups of “zoodles” (zucchini or squash work great)

1/2 c natural peanut butter

1/2 c braggs liquid aminos

1/2 c warm, filtered water

2 T fresh ginger, peeled and chopped

1 garlic clove, finely chopped

2 T apple cider vinegar

1 1/2 T Dark Sesame Oil

2T raw organic honey

1 T toasted sesame seeds

1 scallion, chopped

Directions:

Soften peanut butter in sauce pan on low heat.

Whisk in remaining ingredients, and simmer on low.

Then pour on your favorite zoodles and season with sesame seeds and scallions.

 

 

ProTip: Boost the nutrition of your meal: Add your favorite vegetables to the zoodles like asparagus, broccoli, cauliflower, cherry tomatoes, etc.
