Eating in a healthy way can be simple, fun, beautiful, and (yes) even exciting!
When I get together with family and friends, I like to keep the meals simple, clean, whole and served buffet-style.
This is an example of an awesome meal served to over 15 people in a buffet (serve-yourself) style.
I use greens, quinoa, and wild rice as the foundational foods and a “base” for the meal, then I keep it simple by offering a variety of whole foods to top off the meal.
The toppings here included: beans, shredded carrots, corn, celery, onions, tomatoes, diced bell peppers, avocado and sliced almonds. You can add more of what your family loves: sunflower seeds, alfalpha sprouts, mushrooms, and cucumbers are other great topping ideas.
Offering fruit (grapes, watermelon and pineapple), homemade salad dressings, and a delicious zucchini brownie made this delicious meal complete.
ProTip: Keep it fun!
Rather than throw-out the pineapple shell after you have removed the fresh pineapple for your fresh fruit plate, Use the pineapple shell as a serving dish for the quinoa.
When I make this for my family, I use the pineapple shell as individual “plates” and my family uses the pineapple boats to eat from–they just pile on the quinoa, the toppings, and eat right from the pineapple. It’s really fun!
It’s a enjoyable, easy way to savor clean, whole foods, and introduce your family and friends to the simplicity of healthy meals.
