My Vanilla Protein Balls are my secret weapon against afternoon cravings and fatigue.
They are key for me to keep adrenal fatigue away–since my adrenal gland struggles so much more when I eat the sugar that I crave when I feel the afternoon crash hit.
I always have some in the fridge, and I often make double the recipe and freeze half for quick easy snacks. This recipe makes 8 balls, so adjust accordingly for your needs and family size.
Vanilla Protein Balls
½ cup pumpkin seeds, soaked
8 Medjool Dates, soaked
1 teaspoon Vanilla Extract
1/3 c vegan vanilla protein
¼ teaspoon cinnamon
½ teaspoon nutmeg (optional)
⅛ cup water
SOAK THE INGREDIENTS: Soak pumpkin seeds and dates in water for 15 minutes and drain.
COMBINE THE INGREDIENTS. Place pumpkin seeds and dates in the blender and blend until well combined. Add water slowly as needed. Place mixture into a bowl and add protein powder, vanilla extract, cinnamon and nutmeg. . If mix is dry, add 1T filtered water until desired consistency—should be sticky, firm like a dense cookie dough.
MAKE THE PROTEIN BALLS. Once ingredients are mixed well, roll into 8 even balls. Serve or store in refrigerator. Double the recipe, and store half in the freezer (they last a month in the freezer).
ProTip: Roll the protein balls in shredded coconut for extra flavor, texture, and omegas!
