I made this delicious Vanilla Banana Protein Pancake recipe yesterday and it was a huge hit!
Full of protein, omegas, and fiber–it’s also a healthy, hearty, energy boosting meal!
Ingredients:
1 scoop Vanilla Vegan Protein
½ c oats (or 1/2 c coconut flour)
1 T coconut flour
¼ c + 2 T coconut milk (carrageenan free)
1 T ground flax + 3 T water (mix, and let sit)–or 1 organic egg
1 ripe banana
Directions:
Add oats to blender (blend into fine oat flour)
add vanilla protein
add coconut flour,
then add coconut milk
blend;
Then add:
the “flax egg” (mixture of flax and water), or organic egg
and banana
blend again.
Add 1 T coconut milk as needed for desired “pancake batter” consistency.
Grease griddle with coconut oil.
Heat griddle to medium.
Add batter to griddle and cook away!
These pancakes will be a little thicker in consistency, and will require a little longer cooking time.
I like to keep them small–silver dollar size, and stack them high, and serve with coconut whipped creme, and grade B maple syrup.
ProTip: Change the color of your pancakes in a healthy way.
Add finely blended strawberries for a pink color, or finely blended greens for a fun green color (your kids will love it!)
