Sweet Potatoes & Green Beans with Honey Thyme Glaze
This is a simple, satisfying dish that can serve as either a full meal, or a lovely side. It is warming, sweet, filling and delicious!
Ingredients
4 sweet potatoes, peeled and diced into 1/2 inch cubes
3 handfuls of green beans, washed and ends snipped
2 cloves garlic, peeled and minced
2T raw organic honey
1 T Thyme
1/4 c water
1 T coconut oil (or grass-fed butter)
Salt
Pepper
Olive oil
Directions:
Toss the sweet potatoes in olive oil, a dash of salt and pepper.
Place the sweet potatoes on a baking sheet and bake at 400 degrees for 10-15 minutes, tossing them about 1/2 way through the cook time.
Toss the green beans in olive oil, a dash of salt and pepper.
Add the green beans to the sweet potatoes on the baking sheet and bake at 400 degrees for and addiitonal 10 minutes, just long enough to crisp them.
While the green beans and potatoes are roasting, start the glaze.
In a small sauce pan, add the 1/4 cup water, honey, thyme, garlic, coconut oil and a dash of salt and pepper and cook on medium heat until the glaze begins to thicken. Reduce heat and scrape the bottom of the pan, collecting any browned bits of garlic and thyme from the bottom of the pan. Simmer for another few mintues until thickened.
Remove the roasted veg from the oven, place in a large serving bowl and pour the glaze over the veg, mixing well.
Serve and enjoy!
