Sweet Potato Pizza Crust is a fun way to boost your nutrition, vitamins, minerals, fiber and antioxidants while enjoying a family favorite–PIZZA!
Sweet potatoes are loaded with nutrition. Just one cup will provide you with vitamin A, vitamin C, B vitamins: 2,3, 5, 6, 11, copper, potassium and fiber. Delicious, filing, and versatile, I use sweet potatoes as a crust for my home-made pizzas.
This recipe is simple. We often enjoy this sweet potato pizza crust, cut into squares, as a crispy healthy cracker, and dip with hummus or other vegetable dips.
Ingredients: (makes 3, 6-inch pizza crusts)
3 medium sweet potatoes, washed and peeled
1 1/3 c gluten-free oat flour
2 eggs
1/4 tsp pink himalayan sea salt
1/2 tsp minced garlic
2 T olive oil
Directions:
Add the sweet potatoes and oat flour to high speed blender, and blend until soft and incorporated. Add eggs, garlic and salt. Blend again. The mixture should begin to take on the appearance of a loose dough.
Grease baking pan with coconut oil. Transfer mixture from blender to baking pan. Press into pizza crusts, thinning and shaping with your hands. Crust bakes and tastes best when it’s about 1/4-1/2 inches thick.
You can make the crust thinner and make 3 smaller pizzas for crispier edges–this is easier for baking and flipping the crust when cooking, or make 2 larger pizza crusts that are a little thicker.
Coat with olive oil and bake at 400 degrees for 20-30 minutes, checking on crust the last 10 minutes. The top and middle of the baked crust should feel crispy and dry.
Remove from oven and cool. Then flip the crust over, coat with olive oil, return to the oven and bake for another 5-10 minutes until crust is dry and crispy.
Remove from oven. Load pizza crust with your favorite vegetables and toppings, then return to oven for 5-7 minutes to warm toppings and melt cheese. (I recommend using part-skim mozzarella cheese if you are not allergic to dairy, or vegan cheese. Daiya is my favorite vegan brand since it is:gluten-free, dairy-free and soy-free.)
ProTip: Enjoy this crust as a cracker with healthy vegetable dips or hummus. Make double, and freeze a few pizza crusts for easy-use and quick pizzas anytime.
