Sweet Potato Chips

Sweet potatoes are an excellent food to support your adrenal system because they contain a great source of vitamin B5, (pantothenic acid).

Pantothenic acid is an important nutrient that helps build stamina, boosts the immune system, and help to reduces stress.

Sweet potatoes also contain Anthocyanin, a well known anti-inflammatory nutrient.

Sweet potatoes are a good source of betacarotene (vitamin A), vitamin C, and many other B vitamins (B1, B2, niacin, and B6), manganese, copper, potassium, phosphorus and dietary fiber.
When you are in the mood for something crisp, crunchy and a little salty, this is the snack for you! Especially when your adrenals are getting a low in the afternoon and your cravings for salt begin–reach for this healthy snack alternative.
I add flax to my sweet potato chips for a nice boost in omegas and extra crunch.
Enjoy the added benefits of omegas to this adrenal-boosting snack!

Ingredients:

2 large sweet potatoes, thinly sliced

2 T coconut oil, melted

1T ground flax

1 tsp cinnamon

1/2 tsp pink himalayan sea salt

 

Directions:

Preheat your oven to 250 degrees Fahrenheit.

Slice your sweet potatoes thinly, then coat your slices evenly with coconut oil; and add the sprouted flax, and cinnamon mixture (flip the chips to coat each side).

Line a baking sheet with parchment paper. 
Place the slices on the parchment paper, spacing the chips to prevent overlap so they will cook and crisp evenly.

Bake for 2 hours. 
Flip the chips after one hour to the opposite side.

Chips are done, when crispy.

Sprinkle with sea salt when removed from oven and still warm.

Cool for at least 10 minutes before serving.

ProTip: 
This recipe requires that the sweet potatoes be thinly sliced in order to be crispy. The best tool for the job is a mandolin. If you don’t have one, you can also use a very sharp knife, however the chips will not be as crispy.

ProTip: This recipe can also be baked in a dehydrator at 105 degrees for 12-16 hours.
