Superfood Strawberry Coconut Milk
This is a yummy breakfast or afterschool superfood drink for my kids.
They love adding the fresh strawberries from our garden.
It’s a simple recipe and also a healthier version from the “Strawberry Quik” that I grew up on.
Ingredients:
16 ounces sweetened coconut milk
1 cup fresh strawberries (frozen is okay)
1 scoop vegan protein powder (berry or vanilla flavor are delicious options)
1 T raw organic honey (honey is not for children under 1 year old)
1/2 cup ice
Blend well and serve with a sliced strawberry on top.
*Optional: 1 fresh or frozen banana for an even sweeter flavor and creamier consistency.
ProTip: Add more ice for a thicker, shake-like consistency that you can eat with a spoon
ProTip: Pour mix into popsicle trays and freeze for a healthy, yummy, after school or mid-afternoon superfood treat!
