Sweet Corn Summer Salad

I love summer corn–especially sweet corn. This is a fun summer salad to share with family and friends. It takes less than 30 minutes to make, and is consumed even faster!

I spent a few summers picking corn from my friend’s gradfather’s corn field. At the end of the day, he would pay us and let us take home a bag of corn to our families. We always had plenty of freshly harvested corn during the summer!

You can pick up all of the ingredients to make this delicious corn salad at your farmer’s market–it is super important to support your local farmers and growers. Or grow them yourself in your own garden.

 

Ingredients: 

1/4 c olive oil

1 large red onion, diced

2 tsp chili powder

2 tsp cumin

6 ears of fresh corn, shucked with corn sliced off (approx 3-4 cups)

1 red bell pepper, diced

1 green bell pepper, diced

1 c tomatoes, peeded, seeded and diced

1/2 c cilantro, chopped

3 T apple cider vinegar

Dash of sea salt

Dash of ground pepper

Directions:

Add 2T olive oil to skillet; cook onions until soft, then add spices and cook another few minutes.

Transfer to mixing bowl and allow to cool 5-1o minutes.

Add remaining ingredients, and remaining olive oil;  toss well and serve.
