Roasted Potato and Spinach Salad
This is a simple, robust salad that serves as a delicious side dish.
It takes only the baking time of the potatoes to make, and requires only a few ingredients.
Ingredients:
8 baking potatoes, cut into 1″ cubes
1/4 c Olive oil
2 cloves Garlic
1 lemon, juiced
Salt
Pepper
Directions:
Toss the potatoes with 2T olive oil, minced garlic, and a dash of salt and pepper. Bake at 425 degrees for 25 minutes, tossing halfway through. Bake until tender.
Dressing Instructions:
Squeeze the juice of the lemon into a bowl, add the remaining 2T olive oil, a dash of salt and pepper. Whisk, then Toss the potatoes into the dressing, and then toss in the spinach.
Serve warm.
Season to taste with salt and pepper.
