This cool and refreshing salad has a little bit of everything from protein, to fiber to omegas. Cucumbers are a wonderful diuretic and make your skin look amazing.
Top it with flaxmeal or chia seed: this adds a nice flavor along with a boost in omegas for cardiovascular and neurological support.
Ingredients
2 cans organic chickpeas, drained and rinsed
2 cucumbers
8 green onions
1/2 c parsley
2 avocado
8 c organic baby spinach
1/4 c feta cheese
2 limes
1 lemon
4 T extra virgin olive oil
2 T Flaxmeal or chia seeds
Dash pink himalayan sea salt and ground black pepper (to taste)
Preparation
Chop the cucumbers, green onion, parsley, and avocado.
Juice limes and lemon and combine with olive oil.
1. Combine chickpeas, cucumber, green onion, parsley, avocado, baby spinach and feta cheese together in a large salad bowl.
2. Drizzle with the lime, lemon and extra virgin olive oil. mixture
3. Toss well until evenly distributed. Sprinkle with GSGLife TriOmega Sprouted Flax.
4. Divide into bowls and season with sea salt and black pepper to taste.
