Quinoa Salad with Avocado
Ingredients:
2 c Quinoa, cooked
1 cucumber, chopped
4 celery stalks, chopped
2 bell peppers, chopped (I used red and green for vibrant color)
1/2 red onion, chopped
1 avocado
1/4 olive oil +1 T
1 lemon, juiced
1 clove garlic, mined
1/4 tsp salt
1/4 tsp pepper
Instructions:
Place the quinoa in a large bowl, mix in the olive oil and the juice of one lemon. Add in the chopped vegetable and mix well.
Top with the avocado, drizzle 1T olive oil on the avocado and add a dash of salt and pepper.
Serve warm or cold.
