Protein Brownies
Brownies are a weakness of mine. I love the doughy (gooey) chocolatey goodness that is “the brownie.”
Rather than deny myself one of my favorite food-loves, I have found a way to superfood it into a healthier version to please both my tastebuds and my waistline.
Protein is a great substitute for flour. It also helps to build muscle, helps maintain a stable blood sugar (no post-brownie sugar lows), burns fat and keeps me full longer. All good things!
Protein Brownies
1 can chickpeas (drained and rinsed)
½ c raw organic cacao
2 scoops vegan chocolate protein
¼ c raw organic honey
1/8 tsp vanilla
½ c sun butter
1 tsp aluminum-free baking powder
½ c unsweetened coconut milk
1 organic egg white
Directions:
Preheat oven to 350 degrees. Grease a baking tray with coconut oil.
Add all ingredients to blender or food processed, and combine until smooth.
Pour onto baking tray, bake for 15 min (or until toothpick comes out clean), and enjoy!
I love these brownies with a dollop of coconut whipped creme!
