Kale, Cabbage & Carrot Salad with Tahini Dressing
Kale is a beautiful green.
Leafy, ruffled, full of vitamins, minerals, antioxidants and fiber. It is a great green to add to your nutrition plan.
This is one of my favorite, simple salad recipes, paired with a delicious dressing.
Salad Ingredients:
- 6 c kale (about 2 medium sized bunches)
- 2 purple cabbage, shredded
- 2 carrots, shredded
- ½ red onion, diced
- 1 cucumber, sliced and quartered
- 1/4 c pumpkin seeds
Dressing Ingredients
- 3 T tahini
- 2 T lemon juice
- 1/2 tsp curry powder
- 2 garlic clove, chopped
- 1 tsp peeled and grated ginger
- 4 dates, soaked in hot water for 10 minutes
- 1/4 tsp sea salt
- 1/4 c + 2 T water
- pinch of cayenne
- dash pepper
Directions
- Drain dates from water & remove pits
2. Add all dressing ingredients to blender
3. Blend until smooth (about 2 minutes)– Adjust thickness to desired consistency by adding water 1 T at a time and blending.
4. Place the chopped kale and chopped/shredded veggies and pumpkin seeds in a large bowl and pour in the dressing.
5. Mix dressing into salad
6. Let salad sit for 5-10 minutes before serving, to allow the kale and cabbage to soften a bit before serving.
7. Serve and Enjoy!
