Healthy Homemade Hash Browns

Ingredients:

4 large yukon potatoes, peeled

1 medium yellow onion

1/2 green pepper, diced

1/4 c coconut oil

Sea salt and black pepper to taste

Directions:

Shred or spiral cut the potatoes.

Add coconut oil to large pan; turn heat on high heat; add potatoes, onions, bell peppers. Season with salt and pepper.

Lower the heat to medium and cover the pan; cook one side for about 10 minutes or until browned or a little crispy; Flip over and cook for another 10 minutes until the new bottom layer is brown.

Flip over and cook for another 10 minutes until the new bottom layer is brown.

Remove the lid and cook for another 10 minutes.

ProTip: If you don’t like the subtle flavor of coconut oil, purchase a coconut that is more refined. The more refined the coconut oil, the less flavor it has (and the less good it is for you, too).
