Grilled Veggie Salad
Summer is the time for grilling! You can still eat mostly plant-based and enjoy your grill, I promise. You just need to grill your veg.
It’s easy, delicious and fun. Just add some veg to your grill and see what I mean. You will love it!
Choose your favorite veg, make a delicious marinade, and serve on a bed of fresh greens–easy peasy.
Ingredients:
Marinade:
1/2 c balsamic vinegar
1/4 c olive oil
1/4 c fresh parsley, finely chopped
1/4 c fresh basil, finely chopped
5 cloves garlic, minced
Vegetables:
ProTip: add more or substitute with your favorites
3 c asparagus, washed and trimmed
2 zucchini, washed and chopped
2 bell pepper, washed, seeded, and sliced
2 c mushrooms, washed and chopped
1 red onion, halved and slivered
6 cups spinach
Directions:
Heat grill/grill pan to med-high heat,
Wash and prep veg as above,
Whick together the wet ingredients, herbs and garlic in a shallow baking dish or grilling pan.
Add the vegetables to the marinade; mix and coat well.
Let marinate for 15 minutes.
Drain the vegetables and grill for 6-8 minutes (until the zucchini and asparagus are soft and browned)
Reserved the marinade.
Plate the spinach, then add the vegetables to the spinach, then dress with the remaining marinade.
Season with sea salt and pepper as desired.
