I want to share my favorite delicious Creamy Spinach Soup with you today.
This recipe makes 2 servings, so adjust accordingly.
Creamy Spinach Soup
1 cup water
1 ½ cups spinach
1 avocado
1 stalk celery
1 clove garlic
1 teaspoon ginger root
½ teaspoon sea salt
½ cup nut milk (coconut or almond)
Dash cumin
Place all ingredients into a high speed blender and blend to a smooth and creamy texture.
Serve cold, or warm briefly on a stove-top on low.
