Bing Cherry, Almond and Quinoa Salad

I love bing cherries! Every since I was little, and would pick the cherries from my grandpa’s trees every summer, they have been a special favorite summer fruit for me. I used to collect pounds of cherries, and then sell them by the pound, door-to-door to earn money, pulling the brown bags of cherries in my red wagon. So many fun summer memories picking and selling cherries.

I love to add cherries to salads, especially quinoa salads.

Here is one of my favorite summer cherry and quinoa salads.

Ingredients:

2 1/2  c red quinoa, cooked

2 c kale, cut into small ribbons

1 large cucumber, chopped

1 can of red beans, rinsed and drained

1 red onion, diced

1/4 c olive oil

1 T apple cider vinegar

Juice of 1 lemon

2 c bing cherries, pitted and halved

3 cloves garlic, minced

1/2  c sliced almonds

1/8 tsp sea salt

dash pepper

Directions:

Add all ingredients, except kale, to large bowl and toss well.

Add kale and toss again.

Serve warm or chilled.

Enjoy!
