Cauliflower Rice

I love this recipe!

Simple to make and fun to eat!

And good for you.

Cauliflower Rice 
Serves 6
4 cups cauliflower, chopped
6 beets, peeled and chopped
6 scallions, chopped
1/2  red onion, chopped
2 teaspoon coconut oil or olive oil

1  cup, chopped parsley
Sea salt and pepper, to taste

Directions:
Steam the cauliflower until tender, about 10 minutes.

Drain and process in a food processor until it reaches a rice-like consistency.

You can also do this raw if raw cauliflower doesn’t bother your stomach.

Add all of your remaining chopped ingredients to a bowl.

Toss everything together and enjoy!
