Cauliflower is a versatile vegetable. It is often ignored as a boring, white, funny-textured cruciferous, when it should be the highlight of your table.
With simple prep, cauliflower can easily become: pizza crust, rice, soup, and of course, “mash”–a healthy substitute for mashed potatoes.
Cauliflower is a potent protector of health. Low in calories, it is full of antioxidants and cancer-fighting properties.
Just one cup contains more than 70% of the RDA for vitamin C. It is also a good source of B vitamins, potassium, vitamin K, fiber and protein.
Ingredients:
1 head of cauliflower, washed, cored and separated
1/4 c Olive oil
1/2 tsp pink hymalayan sea salt
1/4 tsp fresh ground black pepper
2 garlic cloves, minced
1/2 c canned coconut milk
4 T nutritional yeast
1/4 c chives, chopped
Directions:
Mix 6 T olive oil, garlic, and salt in large bowl.
Toss in the cauliflower and coat it well.
Transfer to a large baking sheet, springle with pepper, and bake at 400 degree for 35-40 minutes, flipping with a spatula every 10 minutes–until the cauliflower becomes golden.
Remove from oven, and add (in batches if needed) to high-speed blender. Add 1/4 c coconut milk, remaining olive oil, and blend well. Slowly add in more coconut milk to desired consistency. Add nutritional yeast and blend until smooth.
Salt and pepper to taste. Top with chives and serve warm.
ProTip: Delicious when topped with mushroom gravy, or a pat of grass-fed butter.
