Baked Baby Red Potatoes:
I love this recipe. It reminds me of garlic mashed potatoes and garlic fries–just a healthier version. My family loves this! We make it fun by mixing up the potatoes–using small white, purple and red potatoes. It keeps the meal colorful, fun and delicious!
Ingredients:
2 lbs baby red potatoes
1/2 c olive oil
12 garlic cloves, minced
2 T fresh rosemary
1 tsp chilli powder
1 tsp pink sea salt
Optional: 1/4 nutritional yeast
Directions:
- Boil water in large pan; add potatoes and a dash of salt. Cook on med-high until potatoes are soft (20-25 minutes). Drain.
- Heat oven to 400 degrees.
- Grease baking sheet with a little olive oil.
- Mix garlic, rosemary, olive oil, salt, chili powder.
- Gently mash the potatoes so they are slightly flattened and split-open a bit.
- Add the flattened and split potatoes to the garlic mixture and stir them in the mixture until coated well.
- Spread the potatoes out on the baking sheet evenly, and bake for 25-30 minutes–until crispy and brown.
- Serve and Enjoy!
