Avocado Cucumber Soup
Avocados are a natural source of healthy omega fatty acids, essential for brain and heart health.
And cucumbers are great for cleansing, detoxification and beautifying the skin.
Add them together in a meal, and it’s a delicious way to nourish your body.
Ingredients:
3 cups water
2 avocados
1 green bell pepper
1 cucumber
1 c basil leaves
2 scallions, chopped
1 garlic clove, chopped
1 jalapeno, seeded and chopped
Juice of 1 lime
Dash of pink himalayan sea salt
2 T olive oil
Optional: roasted pumpkin seeds, chopped chives, avocado slices, diced cucumber, basil leaf.
Directions:
Blend: water, avocados, bell pepper, cucumber, basil, scallions, garlic, jalapeño, lime and salt. Once smooth, slowly add in olive oil.
Chill for 2-3 hours, then serve with toppings: sliced avocado, diced cucumber, basil leaf; or roasted pumpkin seeds and diced chives.
