Southwest Quinoa Bowl

This is a simple salad, using common “southwest-style” ingredients and adding them to a healthy, high-protein grain–quinoa.

The use of clean, whole, colorful and fresh ingredients ensures this meal is not only gorgeous, but also delicious and good-for-you!

 

Ingredients

3 cups quinoa, cooked and ready

1 can black beans, rinsed and drained

1 can red beans, rinsed and drained

1 c corn

1/2 c red onion, diced

1/2 tomatoes, diced

1 avocado, diced

1 lime, juiced

1/2 tsp sea salt

1/2 tsp black pepper

1/4 c olive oil

1/2 tsp cumin

1/2 tsp chili powder

1/4 c cilantro, chopped

Directions:

Mix the salt, pepper, cumin, chili powder in a bowl. Set aside.

Add the olive oil to the quinoa. Mix well.

Add the beans to the quinoa. Mix well.

Add the onions, corn and tomato. Mix well.

Now, add the dry ingredients. Mix  well.

Fold in the cilantro.

ProTip: Serve in a bowl topped with diced avocado and drizzle of olive oil; or serve wrapped in a large collard green with large sliced avocado; or server on a bed of spinach.
