Baked Baby Potatoes

I love this recipe. It reminds me of garlic mashed potatoes and garlic fries–just a healthier version. My family loves this! We make it fun by mixing up the potatoes–using small white, purple and red potatoes. It keeps the meal colorful, fun and delicious!

 

Ingredients:

2 lbs baby red potatoes

1/2 c olive oil

12 garlic cloves, minced

2 T fresh rosemary

1 tsp chilli powder
1 tsp pink sea salt

Optional: 1/4 nutritional yeast

Directions:

  1. Boil water in large pan; add potatoes and a dash of salt. Cook on med-high until potatoes are soft (20-25 minutes). Drain.
  2. Heat oven to 400 degrees.
  3. Grease baking sheet with a little olive oil.
  4. Mix garlic, rosemary, olive oil, salt, chili powder.
  5. Gently mash the potatoes so they are slightly flattened and split-open a bit.
  6. Add the flattened and split potatoes to the garlic mixture and stir them in the mixture until coated well.
  7. Spread the potatoes out on the baking sheet evenly, and bake for 25-30 minutes–until crispy and brown.
  8. Serve and Enjoy!
