My Favorite Sauces
Lemon Sauce:
4T coconut oil
1/4 c minced parsley
Juice of 1 whole lemon
1 red pepper, seeded and sliced thin
Pink sea salt
Black pepper
Directions:
Melt coconut oil on stove; add red pepper, salt and pepper.
Add favorite zoodles to sauce, and simmer.
Add the lemon juice, parsley, and simmer a few monutes longer. Then plate and enjoy!
Pesto Sauce:
Ingredients:
1/4 c basil leaves
1/4 c pine nuts
1 clove garlic
1T grated parmesan cheese
1/4 c olive oil
sea salt
black pepper
Directions:
Blend all ingredients (except olive oil, salt and pepper) in a food processor until smooth, then slowly add the olive oil while mixing to incorporate well. Add in sea salt and black pepper.
Mix with favorite zoodles and enjoy!
Garlic & Olive Oil Sauce:
Ingredients:
1/4 c + 1T EVO (extra virgin olive oil)
1/4 c + 2 T grass fed butter
4 garlic cloves
2T fresh basil, chopped
8 oz can artichoke hearts (packed in oil) drained and quartered
Pink sea salt
Black pepper
Directions:
In pan, heat olive oil, and melt butter. Mix in garlic, basil, and artichoke hearts. Cook for 5-7 minutes until heated.
Mix with favorite zoodles, season with salt and pepper to taste, and enjoy!
Marinara Sauce:
Ingredients:
1 can stewed tomatoes
1/2 can tomato paste
1 T + 2tsp finely diced white onion
1/2 clove garlic, minced
1/2 tsp dried oregano
3 T Olive Oil
Pink sea salt
Black pepper
Directions:
Place the tomatoes, tomato paste, chopped parsley, minced garlic, oregano, salt and pepper into food processor. Blend until smooth.
In pan, on medium heat, add the olive oil and saute the onions for 2-3 minutes. Add the tomato mixture to the sauce pan and simmer for 30 minutes.
Mix with favorite zoodles, season with salt and pepper to taste, and enjoy!
