Kale, Cucumber and Avocado Wrap with Dijon Dressing
Serves 4
Ingredients
- 4 large kale leaves, washed and chopped
- mustard dressing (see below)
- 1 avocado, sliced
- 1 cucumber sliced
- ½ red onion diced
- 2 stalks celery finely chopped
- 2 basil leaves, finely chopped
- ¼ c cilantro, finely chopped
- 4 large collard greens
Dijon Dressing Ingredients
- 5 T olive oil
- 2 1/2 T Dijon mustard
- 1 lemon, juiced
- Dash salt
- Dash pepper
Directions
- Combine all dressing ingredients, reserve a small amount to drizzle on the top of the wrap.
- Add the kale and set aside–let sit for 5-10 minutes, allowing the dressing to soften the kale.
- Mix the onion, celery, basil and cilantro and add to the kale/dressing mix.
- Lie the collard wrap flat and assemble wrap by simply layering the ingredients starting with the avocado slices, then cucumber, and finally add the kale mixture.
- Roll -n- Wrap like a burrito, drizzling with a little dressing, then
- Enjoy!
