Banana-Pineapple & Vanilla Ice Cream

Banana-Pineapple & Vanilla Ice Cream

4 frozen bananas + 1 cup frozen pineapple
3/4 c coconut mik
1 T gluten-free vanilla extract
1 tsp pink himalayan sea salt.

1. Add frozen bananas to a high-speed blender with coconut milk, vanilla extract, and sea salt.

2. When blended, add in the frozen pineapple.

3. Blend until smooth.
I love my ice cream soft and “melted”, but if you don’t like the soft-serve consistency, then freeze it for a few hours and let it set more like firm ice cream. Then use an ice cream scoop and dish it up!
Garnish with fresh bananas, berries, vegan chocolate chips, chia seeds, shredded coconut or coconut whip creme (recipe here: http://www.kristierosser.com/coconut-whipped-cream/)
