Chia Breakfast Pudding
Chia seeds are an excellent source of omegas and fiber.
Chia seeds expand and absorb the flavor of the whatever liquid they are added, too, and help keep you full longer. Chia seeds make delicous, healthy puddings.
I love chia puddings for afternoon healthy snacks , and especially for breakfast.
You can Serve it Warm or cold.
Ingredients:
3 tablespoons chia seeds
1 cup nut milk (coconut is my favorite)
Dash cinnamon
½ teaspoon vanilla
1 teaspoon raw organic honey
1 tablespoon shredded coconut
1 tablespoon vegan protein
ASSEMBLE THE NIGHT BEFORE: The night before you want the pudding for breakfast, mix nut milk (coconut ), chia seeds, vanilla and cinnamon in a container with a lid, shake well and let it sit overnight in the refrigerator.
THE NEXT MORNING: The next morning eat pudding cold topped with your favorite healthy toppings (I love fresh fruit!), or transfer the pudding from the container to a pot on the stove. Warm it for 2 to 3 minutes and serve it in a bowl.Then add your favorite toppings.
