Black Quinoa Salad with Mango

Ingredients:

2 cups black quinoa

 

1 large mango, diced

3 large tomatoes, diced

5 green onions, sliced

1 cup chopped cilantro

3 medium avocados, diced

1/2 cup fresh lime juice

1 tablespoon olive oil

1 teaspoon cumin

Salt and pepper, to taste

Directions:

  1. Prepare the quinoa. Let cool to room temperature.
  2. In a large bowl, combine quinoa, mango, tomatoes, green onions, cilantro, and avocados.
  3. In a small bowl, whisk together lime juice, olive oil, and cumin.
  4. Pour the mixture over the quinoa salad and gently stir until well combined.
  5. Season with salt and pepper.
  6. Serve at room temperature or chilled.
